Chicken Curry (chicken Handi)
Chicken Curry, also known as Chicken Handi, is a popular dish in Pakistani cuisine. It is a flavorful and aromatic curry made with tender chicken pieces cooked in a rich and creamy tomato-based gravy.
Ingredients
- 1 kg chicken, cut into pieces
- 1 cup yogurt
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 2 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1/2 cup fresh cream
- 2 green chilies, slit
- Fresh coriander leaves for garnish
- Salt to taste
- Oil for cooking
Instructions
- Marinate the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Let it sit for 30 minutes.
- Heat oil in a handi or deep pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Pour in the tomato puree and cook until the oil separates from the masala.
- Add the marinated chicken and cook until the chicken is tender and the masala is well blended.
- Add garam masala, green chilies, and fresh cream. Simmer for a few minutes.
- Garnish with fresh coriander leaves and serve hot with naan or rice.
