Chicken Curry (kundapura Chicken)

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 1 tomato, finely chopped
  • 1/2 cup fresh coconut, grated
  • 1/4 cup yogurt
  • 2 tbsp vegetable oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 inch ginger, grated
  • 4-5 garlic cloves, minced
  • 2-3 green chilies, slit
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Few curry leaves
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Marinate the chicken with yogurt, turmeric powder, and salt. Let it sit for 15 minutes.
  2. Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, onions, ginger, garlic, and green chilies. Sauté until onions turn golden brown.
  3. Add tomatoes and cook until they turn mushy.
  4. Now, add the marinated chicken and cook on medium heat until the chicken is half done.
  5. Add red chili powder, coriander powder, and grated coconut. Mix well and cook for another 10-15 minutes.
  6. Finally, add garam masala and curry leaves. Cook for a few more minutes until the chicken is tender and the curry reaches the desired consistency.
  7. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
