Chicken Curry (Kundapura Chicken) is a popular dish from the coastal region of Karnataka, known for its rich and aromatic flavors. This spicy and tangy curry is a perfect blend of traditional Indian spices and fresh coconut, making it a delightful treat for your taste buds.
Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 1 tomato, finely chopped
- 1/2 cup fresh coconut, grated
- 1/4 cup yogurt
- 2 tbsp vegetable oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 inch ginger, grated
- 4-5 garlic cloves, minced
- 2-3 green chilies, slit
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Few curry leaves
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Marinate the chicken with yogurt, turmeric powder, and salt. Let it sit for 15 minutes.
- Heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, onions, ginger, garlic, and green chilies. Sauté until onions turn golden brown.
- Add tomatoes and cook until they turn mushy.
- Now, add the marinated chicken and cook on medium heat until the chicken is half done.
- Add red chili powder, coriander powder, and grated coconut. Mix well and cook for another 10-15 minutes.
- Finally, add garam masala and curry leaves. Cook for a few more minutes until the chicken is tender and the curry reaches the desired consistency.
- Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
