Chicken Curry (kundapura Koli Saaru)
This flavorful and spicy chicken curry is a popular dish from the Karnataka Cuisine, specifically from the Kundapura region. It is known for its rich and aromatic gravy, made with a blend of traditional Indian spices.
Ingredients
- 1 kg chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/2 cup coconut milk
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 inch ginger, grated
- 4-5 garlic cloves, minced
- 2-3 green chilies, slit
- 1/2 tsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger, garlic, and green chilies. Sauté for a few minutes.
- Now, add the chicken pieces and cook until they turn white.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Pour in the tomato puree and cook until the oil separates.
- Add coconut milk and garam masala. Simmer for 10-15 minutes until the chicken is cooked through and the gravy thickens.
- Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
