Chicken Curry (liberian Style Chicken Curry)

Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, diced
  • 1 cup coconut milk
  • 2 tbsp tomato paste
  • 2 tbsp curry powder
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 scotch bonnet pepper, chopped (optional for heat)
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 2 cups cooked rice, for serving

Instructions

  1. Season the chicken pieces with salt, pepper, and 1 tablespoon of curry powder.
  2. Heat the vegetable oil in a large pot over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  4. Stir in the remaining curry powder, thyme, and paprika. Cook for 1-2 minutes to toast the spices.
  5. Add the diced tomatoes, tomato paste, and coconut milk. Stir to combine and bring to a simmer.
  6. Return the browned chicken to the pot. If using the scotch bonnet pepper, add it at this point. Cover and simmer for 45-50 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Adjust seasoning with salt and pepper, if needed.
  8. Serve the chicken curry over cooked rice and enjoy!
