Ingredients
- 2 lbs chicken, cut into pieces
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 1 cup coconut milk
- 2 tbsp tomato paste
- 2 tbsp curry powder
- 1 tsp thyme
- 1 tsp paprika
- 1 scotch bonnet pepper, chopped (optional for heat)
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 cups cooked rice, for serving
Instructions
- Season the chicken pieces with salt, pepper, and 1 tablespoon of curry powder.
- Heat the vegetable oil in a large pot over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Stir in the remaining curry powder, thyme, and paprika. Cook for 1-2 minutes to toast the spices.
- Add the diced tomatoes, tomato paste, and coconut milk. Stir to combine and bring to a simmer.
- Return the browned chicken to the pot. If using the scotch bonnet pepper, add it at this point. Cover and simmer for 45-50 minutes, or until the chicken is cooked through and the sauce has thickened.
- Adjust seasoning with salt and pepper, if needed.
- Serve the chicken curry over cooked rice and enjoy!
