Chicken Curry with Rice (Kundapura Koli Saaru Rice) is a traditional dish from Karnataka Cuisine that is packed with aromatic spices and flavors. This dish is perfect for a comforting and satisfying meal.
Ingredients
- 1 lb chicken, cut into pieces
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 tomatoes, pureed
- 1/2 cup coconut milk
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 inch ginger, grated
- 4-5 garlic cloves, minced
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
- Wash the basmati rice and soak it in water for 30 minutes.
- Heat oil in a large pot and add mustard seeds and cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the ginger and garlic, and sauté for a few minutes.
- Now, add the chicken pieces and cook until they are no longer pink.
- Stir in the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook for 5-7 minutes.
- Pour in the coconut milk and let the curry simmer for 15-20 minutes until the chicken is cooked through.
- Meanwhile, cook the soaked rice in a separate pot until it's fluffy and set aside.
- Once the chicken curry is ready, sprinkle garam masala and garnish with fresh cilantro leaves.
- Serve the chicken curry with the cooked basmati rice.
