Chicken Curry With Rice (kundapura Koli Saaru Rice)

Ingredients

  • 1 lb chicken, cut into pieces
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 tomatoes, pureed
  • 1/2 cup coconut milk
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 inch ginger, grated
  • 4-5 garlic cloves, minced
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes.
  2. Heat oil in a large pot and add mustard seeds and cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  3. Add the ginger and garlic, and sauté for a few minutes.
  4. Now, add the chicken pieces and cook until they are no longer pink.
  5. Stir in the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook for 5-7 minutes.
  6. Pour in the coconut milk and let the curry simmer for 15-20 minutes until the chicken is cooked through.
  7. Meanwhile, cook the soaked rice in a separate pot until it's fluffy and set aside.
  8. Once the chicken curry is ready, sprinkle garam masala and garnish with fresh cilantro leaves.
  9. Serve the chicken curry with the cooked basmati rice.
