Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 garlic cloves, minced
- 2 bay leaves
- 1 cup chicken broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chicken pieces and brown them on all sides.
- Remove the chicken from the pot and set aside.
- Add the onions, carrots, and garlic to the pot and sauté until the vegetables are softened.
- Return the chicken to the pot and add the potatoes, bay leaves, and chicken broth.
- Season with salt and pepper, cover the pot, and simmer for 1 hour or until the chicken is tender.
- Remove the bay leaves before serving.
