Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chicken pieces and brown them on all sides.
  3. Remove the chicken from the pot and set aside.
  4. Add the onions, carrots, and garlic to the pot and sauté until the vegetables are softened.
  5. Return the chicken to the pot and add the potatoes, bay leaves, and chicken broth.
  6. Season with salt and pepper, cover the pot, and simmer for 1 hour or until the chicken is tender.
  7. Remove the bay leaves before serving.
