Chicken Fideos

Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 8 oz fideos (or vermicelli noodles)
- 1 can (14 oz) diced tomatoes
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned. Remove the chicken from the pot and set aside.
- In the same pot, add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
- Add the smoked paprika and cumin, stirring to coat the vegetables.
- Add the fideos to the pot and toast them for a few minutes, stirring constantly.
- Pour in the diced tomatoes and chicken broth. Bring the mixture to a simmer.
- Return the cooked chicken to the pot. Simmer for 10-15 minutes, or until the fideos are tender and the chicken is cooked through.
- Season with salt and pepper to taste. Serve hot.
