Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 8 oz fideos (or vermicelli noodles)
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken and cook until browned. Remove the chicken from the pot and set aside.
  2. In the same pot, add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
  3. Add the smoked paprika and cumin, stirring to coat the vegetables.
  4. Add the fideos to the pot and toast them for a few minutes, stirring constantly.
  5. Pour in the diced tomatoes and chicken broth. Bring the mixture to a simmer.
  6. Return the cooked chicken to the pot. Simmer for 10-15 minutes, or until the fideos are tender and the chicken is cooked through.
  7. Season with salt and pepper to taste. Serve hot.
