Chicken Fried Rice (arroz Chaufa De Pollo)
Chicken Fried Rice, known as Arroz Chaufa de Pollo, is a popular dish in Peruvian Chinese cuisine. This flavorful and satisfying fried rice dish is a fusion of Chinese and Peruvian flavors, creating a unique and delicious meal.
Ingredients
- 2 cups cooked white rice
- 1 chicken breast, diced
- 2 eggs, beaten
- 1/2 cup frozen peas and carrots
- 3 cloves garlic, minced
- 3 green onions, chopped
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ground black pepper
- 2 tablespoons vegetable oil
Instructions
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat.
- Add the diced chicken breast and cook until browned and cooked through. Remove the chicken from the wok and set aside.
- Heat the remaining tablespoon of vegetable oil in the wok. Add the minced garlic and cook for 30 seconds.
- Push the garlic to the side of the wok and pour the beaten eggs into the center. Scramble the eggs until they are cooked through.
- Add the cooked rice, peas, carrots, and green onions to the wok. Stir-fry for 2-3 minutes.
- Return the cooked chicken to the wok and mix well with the rice and vegetables.
- In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and black pepper. Pour the sauce over the fried rice and toss to combine.
- Cook for an additional 2-3 minutes, stirring constantly, until everything is heated through.
- Remove from heat and serve hot.
