Chicken Fried Rice (arroz Chaufa De Pollo)

Ingredients

  • 2 cups cooked white rice
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 1/2 cup frozen peas and carrots
  • 3 cloves garlic, minced
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat.
  2. Add the diced chicken breast and cook until browned and cooked through. Remove the chicken from the wok and set aside.
  3. Heat the remaining tablespoon of vegetable oil in the wok. Add the minced garlic and cook for 30 seconds.
  4. Push the garlic to the side of the wok and pour the beaten eggs into the center. Scramble the eggs until they are cooked through.
  5. Add the cooked rice, peas, carrots, and green onions to the wok. Stir-fry for 2-3 minutes.
  6. Return the cooked chicken to the wok and mix well with the rice and vegetables.
  7. In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and black pepper. Pour the sauce over the fried rice and toss to combine.
  8. Cook for an additional 2-3 minutes, stirring constantly, until everything is heated through.
  9. Remove from heat and serve hot.
