Ingredients
- 2 cups cooked white rice
- 1 pound boneless, skinless chicken breast, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 eggs, beaten
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the diced chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining vegetable oil and sauté the garlic and onion until fragrant.
- Add the mixed vegetables to the skillet and cook until they are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until they are cooked through.
- Add the cooked rice and soy sauce to the skillet, stirring to combine with the vegetables and eggs.
- Return the cooked chicken to the skillet and stir to mix everything together. Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes, stirring constantly, until everything is heated through.
- Remove from heat and serve hot.
