Chicken Fried Rice (arroz Con Pollo)

Ingredients

  • 2 cups cooked white rice
  • 1 pound boneless, skinless chicken breast, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  2. Add the diced chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining vegetable oil and sauté the garlic and onion until fragrant.
  4. Add the mixed vegetables to the skillet and cook until they are tender.
  5. Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until they are cooked through.
  6. Add the cooked rice and soy sauce to the skillet, stirring to combine with the vegetables and eggs.
  7. Return the cooked chicken to the skillet and stir to mix everything together. Season with salt and pepper to taste.
  8. Cook for an additional 2-3 minutes, stirring constantly, until everything is heated through.
  9. Remove from heat and serve hot.
