Chicken Fried Rice (chaufa De Pollo)

Ingredients

  • 2 cups cooked white rice
  • 1 cup diced chicken breast
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green onion
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken and cook until browned and cooked through.
  3. Push the chicken to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked, then mix with the chicken.
  4. Add the remaining tablespoon of vegetable oil to the skillet. Add the diced red bell pepper and green onion, and stir-fry for 2-3 minutes.
  5. Add the cooked rice to the skillet, breaking up any clumps, and stir-fry for 2-3 minutes.
  6. Drizzle the soy sauce, oyster sauce, and sesame oil over the rice. Sprinkle with black pepper and stir-fry for an additional 2-3 minutes.
  7. Remove from heat and serve hot.
