Chicken Fried Rice (chaufa De Pollo)
Chicken Fried Rice, known as Chaufa de Pollo, is a popular dish in Peruvian Chinese cuisine. This flavorful and satisfying dish combines Chinese and Peruvian flavors to create a unique and delicious meal.
Ingredients
- 2 cups cooked white rice
- 1 cup diced chicken breast
- 1/2 cup diced red bell pepper
- 1/2 cup diced green onion
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ground black pepper
- 2 tablespoons vegetable oil
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced chicken and cook until browned and cooked through.
- Push the chicken to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked, then mix with the chicken.
- Add the remaining tablespoon of vegetable oil to the skillet. Add the diced red bell pepper and green onion, and stir-fry for 2-3 minutes.
- Add the cooked rice to the skillet, breaking up any clumps, and stir-fry for 2-3 minutes.
- Drizzle the soy sauce, oyster sauce, and sesame oil over the rice. Sprinkle with black pepper and stir-fry for an additional 2-3 minutes.
- Remove from heat and serve hot.
