Chicken Ghee Roast is a classic dish from Mangalurean Catholic Cuisine, known for its rich and aromatic flavors. This dish is a perfect blend of spices and ghee, creating a mouthwatering experience for anyone who enjoys Indian cuisine.
Ingredients
- 500g chicken, cut into pieces
- 3 tbsp ghee
- 1 tbsp ginger-garlic paste
- 2 tbsp red chili powder
- 1 tsp turmeric powder
- 1 tbsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp black pepper powder
- 1/2 tsp fenugreek seeds
- 1/2 tsp tamarind paste
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Marinate the chicken pieces with red chili powder, turmeric powder, coriander powder, cumin powder, black pepper powder, ginger-garlic paste, and salt. Let it sit for 15 minutes.
- Heat ghee in a pan and add fenugreek seeds. Once they start to splutter, add the marinated chicken.
- Cook the chicken on medium heat until it is tender and the ghee starts to separate from the masala.
- Add tamarind paste and mix well. Cook for another 5 minutes.
- Garnish with fresh coriander leaves and serve hot.
