Chicken Ginger Soup (tinolang Manok)

Ingredients

  • 1 whole chicken, cut into serving pieces
  • 1 thumb-sized ginger, sliced
  • 1 medium-sized green papaya, peeled, seeded, and cut into wedges
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups water or chicken broth
  • 2 tablespoons fish sauce (patis)
  • 2 cups spinach or chili leaves
  • Salt and pepper to taste

Instructions

  1. In a pot, sauté the ginger, onion, and garlic until fragrant.
  2. Add the chicken pieces and cook until lightly browned.
  3. Pour in the water or chicken broth and bring to a boil. Simmer for 20 minutes or until the chicken is tender.
  4. Add the green papaya and cook for another 5 minutes or until the papaya is tender.
  5. Season with fish sauce, salt, and pepper. Add the spinach or chili leaves and cook for another 2 minutes.
