Ingredients
- 1 whole chicken, cut into serving pieces
- 1 thumb-sized ginger, sliced
- 1 medium-sized green papaya, peeled, seeded, and cut into wedges
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups water or chicken broth
- 2 tablespoons fish sauce (patis)
- 2 cups spinach or chili leaves
- Salt and pepper to taste
Instructions
- In a pot, sauté the ginger, onion, and garlic until fragrant.
- Add the chicken pieces and cook until lightly browned.
- Pour in the water or chicken broth and bring to a boil. Simmer for 20 minutes or until the chicken is tender.
- Add the green papaya and cook for another 5 minutes or until the papaya is tender.
- Season with fish sauce, salt, and pepper. Add the spinach or chili leaves and cook for another 2 minutes.
