Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 small onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup water
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 16 oz potato gnocchi
- 3 cups fresh spinach
- 1 cup half and half
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned.
- Add the diced onion and minced garlic to the pot. Cook until the onion is translucent.
- Pour in the chicken broth and water. Stir in the dried thyme, oregano, salt, and pepper. Bring the mixture to a boil.
- Add the gnocchi to the pot and cook according to the package instructions.
- Once the gnocchi is cooked, reduce the heat to low and add the fresh spinach, half and half, and grated Parmesan cheese. Stir until the spinach wilts and the cheese is melted.
- Serve the soup hot, garnished with additional Parmesan cheese if desired.
