Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 cup chicken broth
  • 1/2 cup creamy peanut butter
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 2 tbsp chopped fresh cilantro for garnish

Instructions

  1. Season the chicken pieces with salt, pepper, cumin, and paprika.
  2. In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
  4. Stir in the chicken broth, peanut butter, and cayenne pepper. Mix well until the peanut butter is fully incorporated into the sauce.
  5. Return the chicken pieces to the skillet, cover, and simmer for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Adjust the seasoning with salt and pepper if needed.
  7. Garnish with chopped cilantro before serving.
