Chicken In Spicy Peanut Sauce (sajta De Pollo)
Chicken in Spicy Peanut Sauce, also known as Sajta de Pollo, is a popular dish in Bolivian cuisine. This flavorful and aromatic dish is a perfect combination of tender chicken and a rich, spicy peanut sauce.
Ingredients
- 1.5 lbs chicken, cut into pieces
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 cup chicken broth
- 1/2 cup creamy peanut butter
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 tbsp chopped fresh cilantro for garnish
Instructions
- Season the chicken pieces with salt, pepper, cumin, and paprika.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
- Stir in the chicken broth, peanut butter, and cayenne pepper. Mix well until the peanut butter is fully incorporated into the sauce.
- Return the chicken pieces to the skillet, cover, and simmer for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
- Adjust the seasoning with salt and pepper if needed.
- Garnish with chopped cilantro before serving.
