Ingredients
- 1 whole chicken, cut into pieces
- 3 tablespoons tamarind paste
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 2 red chilies, sliced
- 1 tablespoon palm sugar
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon turmeric powder
- 1 lemongrass stalk, bruised
- 2 cups water
- Salt to taste
Instructions
- In a bowl, mix the tamarind paste with water and strain to extract the juice.
- Heat oil in a pan and sauté the shallots, garlic, and red chilies until fragrant.
- Add the chicken pieces and cook until browned.
- Stir in the tamarind juice, palm sugar, ground coriander, ground cumin, turmeric powder, lemongrass, and water. Simmer until the chicken is cooked through and the sauce thickens.
- Season with salt to taste and serve hot.
