Ingredients

  • 1 whole chicken, cut into pieces
  • 3 tablespoons tamarind paste
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 tablespoon palm sugar
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 lemongrass stalk, bruised
  • 2 cups water
  • Salt to taste

Instructions

  1. In a bowl, mix the tamarind paste with water and strain to extract the juice.
  2. Heat oil in a pan and sauté the shallots, garlic, and red chilies until fragrant.
  3. Add the chicken pieces and cook until browned.
  4. Stir in the tamarind juice, palm sugar, ground coriander, ground cumin, turmeric powder, lemongrass, and water. Simmer until the chicken is cooked through and the sauce thickens.
  5. Season with salt to taste and serve hot.
