Ingredients

  • 4 chicken thighs
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 2 tomatoes, diced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  4. Add the diced tomatoes, paprika, cumin, and coriander to the skillet. Cook for a few minutes until the tomatoes start to break down.
  5. Pour in the chicken broth and return the chicken thighs to the skillet. Cover and simmer for 30 minutes, or until the chicken is cooked through.
  6. Garnish with chopped fresh cilantro before serving.
