Ingredients
- 4 chicken thighs
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 2 tomatoes, diced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 cup chicken broth
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- Season the chicken thighs with salt and pepper.
- Heat the vegetable oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the diced tomatoes, paprika, cumin, and coriander to the skillet. Cook for a few minutes until the tomatoes start to break down.
- Pour in the chicken broth and return the chicken thighs to the skillet. Cover and simmer for 30 minutes, or until the chicken is cooked through.
- Garnish with chopped fresh cilantro before serving.
