Chicken In Wine (coq Au Vin)

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 bottle of red wine
  • 8 ounces of bacon, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons of all-purpose flour
  • 2 cups of chicken broth
  • 1 bouquet garni (a bundle of herbs such as thyme, parsley, and bay leaves)
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.
  2. Season the chicken pieces with salt and pepper, then brown them in the bacon fat. Once browned, remove the chicken and set aside.
  3. Add the chopped onion and carrots to the pot and cook until they start to soften. Add the minced garlic and cook for an additional minute.
  4. Sprinkle the flour over the vegetables and stir to coat. Cook for 2-3 minutes to remove the raw flour taste.
  5. Pour in the red wine and chicken broth, then add the bouquet garni. Bring the mixture to a simmer.
  6. Return the chicken and bacon to the pot. Cover and simmer for 45-60 minutes, or until the chicken is cooked through and tender.
  7. Remove the bouquet garni and skim off any excess fat from the surface of the sauce. Season with salt and pepper to taste.
  8. Serve the Coq au Vin hot, with crusty bread or over mashed potatoes.
