Chicken In Wine (coq Au Vin)
Coq au Vin is a classic French dish that features tender chicken braised in a rich red wine sauce. This recipe is perfect for a special dinner or a cozy night in.
Ingredients
- 1 whole chicken, cut into pieces
- 1 bottle of red wine
- 8 ounces of bacon, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves of garlic, minced
- 2 tablespoons of all-purpose flour
- 2 cups of chicken broth
- 1 bouquet garni (a bundle of herbs such as thyme, parsley, and bay leaves)
- Salt and pepper to taste
Instructions
- In a large Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.
- Season the chicken pieces with salt and pepper, then brown them in the bacon fat. Once browned, remove the chicken and set aside.
- Add the chopped onion and carrots to the pot and cook until they start to soften. Add the minced garlic and cook for an additional minute.
- Sprinkle the flour over the vegetables and stir to coat. Cook for 2-3 minutes to remove the raw flour taste.
- Pour in the red wine and chicken broth, then add the bouquet garni. Bring the mixture to a simmer.
- Return the chicken and bacon to the pot. Cover and simmer for 45-60 minutes, or until the chicken is cooked through and tender.
- Remove the bouquet garni and skim off any excess fat from the surface of the sauce. Season with salt and pepper to taste.
- Serve the Coq au Vin hot, with crusty bread or over mashed potatoes.
