Chicken Inasal Fiesta

Ingredients
- 4 chicken leg quarters
- 1/2 cup cane vinegar
- 1/4 cup lemon-lime soda
- 1/4 cup soy sauce
- 6 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon brown sugar
- 1 teaspoon annatto powder
- Salt and pepper to taste
Instructions
- In a bowl, combine cane vinegar, lemon-lime soda, soy sauce, garlic, ginger, brown sugar, annatto powder, salt, and pepper. Mix well to create the marinade.
- Place the chicken leg quarters in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 4 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 10-12 minutes on each side, or until fully cooked and slightly charred.
- Transfer the grilled chicken to a serving platter and serve hot with steamed rice and atchara (pickled green papaya) on the side.
