Chicken Inasal Fiesta

Ingredients

  • 4 chicken leg quarters
  • 1/2 cup cane vinegar
  • 1/4 cup lemon-lime soda
  • 1/4 cup soy sauce
  • 6 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon brown sugar
  • 1 teaspoon annatto powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine cane vinegar, lemon-lime soda, soy sauce, garlic, ginger, brown sugar, annatto powder, salt, and pepper. Mix well to create the marinade.
  2. Place the chicken leg quarters in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 4 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 10-12 minutes on each side, or until fully cooked and slightly charred.
  4. Transfer the grilled chicken to a serving platter and serve hot with steamed rice and atchara (pickled green papaya) on the side.
