Chicken Inasal Skewers

Ingredients
- 2 lbs chicken thighs, boneless and skinless
- 1/4 cup cane vinegar
- 1/4 cup lemon-lime soda
- 3 cloves garlic, minced
- 1 shallot, finely chopped
- 1 thumb-sized ginger, grated
- 1/4 cup soy sauce
- 1 tablespoon annatto powder
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Bamboo skewers, soaked in water
Instructions
- In a bowl, combine cane vinegar, lemon-lime soda, garlic, shallot, ginger, soy sauce, annatto powder, brown sugar, salt, and pepper. Mix well to create the marinade.
- Cut the chicken thighs into bite-sized pieces and add them to the marinade. Coat the chicken evenly, then cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken pieces onto the soaked bamboo skewers.
- Grill the chicken skewers for about 6-8 minutes on each side, or until fully cooked and slightly charred.
- Remove the chicken inasal skewers from the grill and let them rest for a few minutes before serving.
