Chicken Inasal Skewers

Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1/4 cup cane vinegar
  • 1/4 cup lemon-lime soda
  • 3 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 thumb-sized ginger, grated
  • 1/4 cup soy sauce
  • 1 tablespoon annatto powder
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Bamboo skewers, soaked in water

Instructions

  1. In a bowl, combine cane vinegar, lemon-lime soda, garlic, shallot, ginger, soy sauce, annatto powder, brown sugar, salt, and pepper. Mix well to create the marinade.
  2. Cut the chicken thighs into bite-sized pieces and add them to the marinade. Coat the chicken evenly, then cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken pieces onto the soaked bamboo skewers.
  4. Grill the chicken skewers for about 6-8 minutes on each side, or until fully cooked and slightly charred.
  5. Remove the chicken inasal skewers from the grill and let them rest for a few minutes before serving.
