Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups long-grain white rice
- 1 onion, finely chopped
- 3 tomatoes, blended into a puree
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 scotch bonnet pepper, chopped (optional for heat)
- 1/2 cup tomato paste
- 2 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Season the chicken pieces with salt, pepper, and half of the minced garlic.
- Heat the vegetable oil in a large pot over medium heat. Brown the chicken pieces on all sides, then remove and set aside.
- In the same pot, add the remaining minced garlic, chopped onion, and diced bell pepper. Sauté until the onions are translucent.
- Add the tomato paste, thyme, curry powder, and paprika. Stir to combine with the vegetables.
- Pour in the blended tomato puree and grated ginger. Cook for 5 minutes, stirring occasionally.
- Return the browned chicken pieces to the pot and add the chicken broth. Bring to a simmer, then cover and cook for 20 minutes.
- Stir in the rice, ensuring it is submerged in the liquid. Cover and cook for an additional 20-25 minutes, or until the rice is tender and the chicken is fully cooked.
- Adjust seasoning with salt and pepper, and add the chopped scotch bonnet pepper for extra heat if desired.
