Ingredients

  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 scotch bonnet pepper, chopped (optional for heat)
  • 1/2 cup tomato paste
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Season the chicken pieces with salt, pepper, and half of the minced garlic.
  2. Heat the vegetable oil in a large pot over medium heat. Brown the chicken pieces on all sides, then remove and set aside.
  3. In the same pot, add the remaining minced garlic, chopped onion, and diced bell pepper. Sauté until the onions are translucent.
  4. Add the tomato paste, thyme, curry powder, and paprika. Stir to combine with the vegetables.
