Chicken Kelaguen, also known as Kelaguen Mannok, is a traditional dish from Guamanian cuisine that features marinated grilled chicken mixed with freshly grated coconut and other flavorful ingredients.

Chicken Kelaguen (kelaguen Mannok)

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup freshly grated coconut
  • 1/2 cup chopped green onions
  • 1/4 cup chopped onions
  • 1/4 cup chopped fresh lemon or lime juice
  • 2 tbsp soy sauce
  • 2 tbsp chopped red hot chili peppers
  • Salt to taste

Instructions

  1. Grill the chicken thighs until fully cooked, then let them cool.
  2. Shred the grilled chicken into small pieces and place in a large bowl.
  3. Add freshly grated coconut, green onions, onions, lemon or lime juice, soy sauce, and chopped chili peppers to the bowl with the chicken.
  4. Mix well and season with salt to taste.
  5. Refrigerate the Chicken Kelaguen for at least 1 hour before serving.
