Chicken Kelaguen (kelaguen Mannok)
Chicken Kelaguen, also known as Kelaguen Mannok, is a traditional dish from Guamanian cuisine that features marinated grilled chicken mixed with freshly grated coconut and other flavorful ingredients.
Ingredients
- 2 lbs boneless, skinless chicken thighs
- 1 cup freshly grated coconut
- 1/2 cup chopped green onions
- 1/4 cup chopped onions
- 1/4 cup chopped fresh lemon or lime juice
- 2 tbsp soy sauce
- 2 tbsp chopped red hot chili peppers
- Salt to taste
Instructions
- Grill the chicken thighs until fully cooked, then let them cool.
- Shred the grilled chicken into small pieces and place in a large bowl.
- Add freshly grated coconut, green onions, onions, lemon or lime juice, soy sauce, and chopped chili peppers to the bowl with the chicken.
- Mix well and season with salt to taste.
- Refrigerate the Chicken Kelaguen for at least 1 hour before serving.
