Chicken Kelaguen Spring Rolls
Chicken Kelaguen Spring Rolls are a delicious fusion of Mariana Islands cuisine and Asian flavors. These spring rolls are filled with a zesty and flavorful chicken kelaguen mixture, wrapped in a crispy shell, and served with a tangy dipping sauce.
Ingredients
- 1 lb cooked chicken, shredded
- 1 cup coconut, freshly grated
- 1/2 cup green onions, chopped
- 1/4 cup lemon juice
- 1/4 cup soy sauce
- 1/4 cup onion, finely chopped
- 1/4 cup red pepper, finely chopped
- 12 spring roll wrappers
- Oil for frying
Instructions
- In a large bowl, combine the shredded chicken, freshly grated coconut, green onions, lemon juice, soy sauce, onion, and red pepper. Mix well to combine.
- Place a spring roll wrapper on a clean surface and spoon 2-3 tablespoons of the chicken kelaguen mixture onto the bottom third of the wrapper.
- Fold the bottom of the wrapper over the filling, then fold in the sides, and roll up tightly.
- Heat oil in a pan over medium heat. Fry the spring rolls until golden brown and crispy, about 3-4 minutes per side.
- Remove the spring rolls from the oil and drain on paper towels.
- Serve the chicken kelaguen spring rolls with a dipping sauce of your choice.
