Chicken Kelaguen Spring Rolls

Ingredients

  • 1 lb cooked chicken, shredded
  • 1 cup coconut, freshly grated
  • 1/2 cup green onions, chopped
  • 1/4 cup lemon juice
  • 1/4 cup soy sauce
  • 1/4 cup onion, finely chopped
  • 1/4 cup red pepper, finely chopped
  • 12 spring roll wrappers
  • Oil for frying

Instructions

  1. In a large bowl, combine the shredded chicken, freshly grated coconut, green onions, lemon juice, soy sauce, onion, and red pepper. Mix well to combine.
  2. Place a spring roll wrapper on a clean surface and spoon 2-3 tablespoons of the chicken kelaguen mixture onto the bottom third of the wrapper.
  3. Fold the bottom of the wrapper over the filling, then fold in the sides, and roll up tightly.
  4. Heat oil in a pan over medium heat. Fry the spring rolls until golden brown and crispy, about 3-4 minutes per side.
  5. Remove the spring rolls from the oil and drain on paper towels.
  6. Serve the chicken kelaguen spring rolls with a dipping sauce of your choice.
