Ingredients

  • 1 lb cooked chicken, shredded

  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh grated coconut
  • 12 rice paper wrappers
  • 2 cups lettuce, shredded
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1/4 cup fresh mint leaves

Instructions

  1. In a bowl, combine the shredded chicken, coconut cream, lemon juice, green onions, onion, and grated coconut. Mix well to combine.
  2. Prepare a large shallow dish of warm water. Dip one rice paper wrapper into the water for a few seconds to soften.
  3. Place the softened wrapper onto a clean, damp kitchen towel. Arrange a portion of the lettuce, cucumber, carrot, and mint leaves in the center of the wrapper.
  4. Top the vegetables with a generous spoonful of the chicken kelaguen mixture.
  5. Roll the wrapper over the filling, tucking in the sides as you go, to form a tight roll.
  6. Repeat with the remaining wrappers and filling.
