Ingredients
- 1 lb cooked chicken, shredded
- 1 cup coconut cream
- 1/2 cup lemon juice
- 1/2 cup green onions, chopped
- 1/4 cup onion, finely chopped
- 1/4 cup fresh lemon juice
- 1/4 cup fresh grated coconut
- 12 rice paper wrappers
- 2 cups lettuce, shredded
- 1 cucumber, julienned
- 1 carrot, julienned
- 1/4 cup fresh mint leaves
Instructions
- In a bowl, combine the shredded chicken, coconut cream, lemon juice, green onions, onion, and grated coconut. Mix well to combine.
- Prepare a large shallow dish of warm water. Dip one rice paper wrapper into the water for a few seconds to soften.
- Place the softened wrapper onto a clean, damp kitchen towel. Arrange a portion of the lettuce, cucumber, carrot, and mint leaves in the center of the wrapper.
- Top the vegetables with a generous spoonful of the chicken kelaguen mixture.
- Roll the wrapper over the filling, tucking in the sides as you go, to form a tight roll.
- Repeat with the remaining wrappers and filling.
