Chicken Koobideh

Ingredients

  • 1 lb ground chicken
  • 1 onion, grated
  • 1 teaspoon turmeric
  • 1 teaspoon ground sumac
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground saffron (optional)

Instructions

  1. In a large bowl, mix the ground chicken, grated onion, turmeric, sumac, salt, black pepper, and saffron until well combined.
  2. Divide the mixture into 4 equal portions and shape each portion into a long, cylindrical kebab around a skewer.
  3. Preheat a grill or stovetop grill pan over medium heat. Cook the chicken koobideh for about 10 minutes, turning occasionally, until fully cooked and slightly charred on the outside.
  4. Remove the chicken koobideh from the grill and let it rest for a few minutes before serving.
