Ingredients
- 1 lb ground chicken
- 1 onion, grated
- 1 teaspoon turmeric
- 1 teaspoon ground sumac
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground saffron (optional)
Instructions
- In a large bowl, mix the ground chicken, grated onion, turmeric, sumac, salt, black pepper, and saffron until well combined.
- Divide the mixture into 4 equal portions and shape each portion into a long, cylindrical kebab around a skewer.
- Preheat a grill or stovetop grill pan over medium heat. Cook the chicken koobideh for about 10 minutes, turning occasionally, until fully cooked and slightly charred on the outside.
- Remove the chicken koobideh from the grill and let it rest for a few minutes before serving.
