Chicken Kori Rotti
Chicken Kori Rotti is a traditional dish from the Mangalurean Catholic Cuisine, known for its rich and flavorful taste. This dish consists of tender chicken curry served with crispy rice wafers called "rotti".
Ingredients
- 500g chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/2 cup coconut milk
- 2 tbsp vegetable oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 inch ginger, grated
- 4-5 garlic cloves, minced
- 2 green chilies, slit
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- 8-10 pieces of kori rotti (crispy rice wafers)
Instructions
- Heat oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger, garlic, and green chilies. Sauté for a few minutes.
- Now add the chicken pieces and cook until they turn white.
- Next, add the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 10-15 minutes.
- Pour in the coconut milk and garam masala. Simmer for another 10 minutes until the chicken is cooked through and the curry thickens.
- Garnish with fresh coriander leaves and serve hot with kori rotti.
