Ingredients

  • 500g chicken livers, trimmed and cleaned
  • 2 onions, finely chopped
  • 4 eggs
  • 100g breadcrumbs
  • 100g butter
  • 1/4 cup heavy cream
  • 1/4 cup dry white wine
  • Salt and pepper to taste
  • Pinch of nutmeg

Instructions

  1. In a skillet, melt the butter over medium heat. Add the chopped onions and cook until softened.
  2. Add the chicken livers to the skillet and cook until they are no longer pink in the center.
  3. Pour in the white wine and let it simmer for a few minutes until the alcohol evaporates.
  4. Transfer the mixture to a food processor and blend until smooth.
  5. In a bowl, beat the eggs and heavy cream together. Gradually add the breadcrumbs, nutmeg, salt, and pepper.
  6. Combine the liver mixture with the egg mixture and mix well.
  7. Grease a cake pan and pour the mixture into it.
