Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup dry vermouth
  • 1/4 cup gin
  • 1/4 cup olive brine
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a shallow dish, combine the vermouth, gin, olive brine, lemon juice, garlic, salt, and pepper. Add the chicken breasts and marinate for 15 minutes.
  2. Heat the olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and place in the skillet. Discard the marinade.
  3. Cook the chicken for 6-7 minutes on each side, or until no longer pink in the center and the juices run clear.
  4. Remove the chicken from the skillet and let it rest for a few minutes before serving.
