Chicken Palm Butter, also known as Palm Butter Soup, is a traditional dish in Liberian cuisine. This rich and flavorful stew is made with palm butter, chicken, and an assortment of vegetables and spices, creating a hearty and satisfying meal.
Ingredients
- 2 lbs chicken, cut into pieces
- 1 cup palm butter
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 2 cups chicken broth
- 1 scotch bonnet pepper, whole
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1 cup cassava leaves (optional)
Instructions
- Season the chicken pieces with salt, black pepper, and dried thyme.
- In a large pot, heat the palm butter over medium heat.
- Add the seasoned chicken pieces and cook until browned on all sides.
- Add the chopped onion, diced tomatoes, and sliced bell pepper to the pot. Cook for 5 minutes.
- Pour in the chicken broth and add the whole scotch bonnet pepper. Cover and simmer for 30 minutes.
- If using cassava leaves, add them to the pot and cook for an additional 15 minutes.
- Adjust seasoning to taste and serve hot.
