Chicken Pastel Kapampangan

Ingredients

  • 1 whole chicken, cut into serving pieces
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups coconut milk
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup frozen green peas
  • 3 hard-boiled eggs, peeled and halved
  • 1/4 cup raisins
  • Salt and pepper to taste
  • 3 tablespoons cooking oil

Instructions

  1. In a bowl, marinate the chicken pieces in soy sauce and vinegar for 30 minutes.
  2. Heat oil in a large pot over medium heat. Sauté garlic and onions until fragrant.
  3. Add the marinated chicken pieces and cook until browned.
  4. Pour in the coconut milk and bring to a simmer. Cover and cook for 30 minutes or until the chicken is tender.
  5. Add the bell peppers, green peas, and raisins. Season with salt and pepper. Simmer for another 5 minutes.
  6. Gently stir in the hard-boiled eggs and cook for an additional 2 minutes.
  7. Transfer the Chicken Pastel Kapampangan to a serving dish and serve hot with steamed rice.
