Chicken Pastel Kapampangan

Ingredients
- 1 whole chicken, cut into serving pieces
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 cups coconut milk
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup frozen green peas
- 3 hard-boiled eggs, peeled and halved
- 1/4 cup raisins
- Salt and pepper to taste
- 3 tablespoons cooking oil
Instructions
- In a bowl, marinate the chicken pieces in soy sauce and vinegar for 30 minutes.
- Heat oil in a large pot over medium heat. Sauté garlic and onions until fragrant.
- Add the marinated chicken pieces and cook until browned.
- Pour in the coconut milk and bring to a simmer. Cover and cook for 30 minutes or until the chicken is tender.
- Add the bell peppers, green peas, and raisins. Season with salt and pepper. Simmer for another 5 minutes.
- Gently stir in the hard-boiled eggs and cook for an additional 2 minutes.
- Transfer the Chicken Pastel Kapampangan to a serving dish and serve hot with steamed rice.
