Chicken Pickle (kukhura Ko Achar)
Chicken Pickle, also known as Kukhura Ko Achar, is a popular Nepalese dish that is a spicy and tangy chicken pickle made with a variety of aromatic spices and herbs. It is a great accompaniment to rice, roti, or as a side dish for any meal.
Ingredients
- 500g chicken, cut into small pieces
- 2 tbsp mustard oil
- 1 tsp fenugreek seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tbsp ginger-garlic paste
- 2-3 green chilies, chopped
- 1/2 cup vinegar
- Salt to taste
- 1/2 tsp sugar
- Fresh coriander leaves for garnish
Instructions
- Heat mustard oil in a pan and add fenugreek seeds and cumin seeds. Let them splutter.
- Add turmeric powder, ginger-garlic paste, and green chilies. Saute for a few minutes.
- Add the chicken pieces and cook until they are browned.
- Pour in the vinegar, salt, and sugar. Cook until the chicken is tender and the liquid is reduced.
- Garnish with fresh coriander leaves and let it cool before serving.
