Ingredients

  • 2 ripe plantains, peeled and sliced lengthwise
  • 1 pound ground chicken
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground chicken, onion, and garlic over medium heat until the chicken is no longer pink.
  3. Add the cumin, oregano, paprika, salt, and pepper. Stir in the tomato sauce and simmer for 5 minutes.
  4. Layer half of the sliced plantains in the bottom of a greased 9x13 inch baking dish.
  5. Spread half of the chicken mixture over the plantains, then sprinkle with half of the mozzarella and parmesan cheeses.
  6. Repeat the layers with the remaining plantains, chicken mixture, and cheeses.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Let it rest for a few minutes before slicing. Garnish with fresh cilantro before serving.
