Chicken Plantain Lasagna (pastelón De Pollo)
This Chicken Plantain Lasagna, also known as Pastelón de Pollo, is a delicious fusion dish that combines the flavors of Puerto Rican and Chinese cuisines. It features layers of ripe plantains, seasoned ground chicken, and gooey cheese, creating a unique and flavorful lasagna-like casserole.
Ingredients
- 2 ripe plantains, peeled and sliced lengthwise
- 1 pound ground chicken
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup tomato sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the ground chicken, onion, and garlic over medium heat until the chicken is no longer pink.
- Add the cumin, oregano, paprika, salt, and pepper. Stir in the tomato sauce and simmer for 5 minutes.
- Layer half of the sliced plantains in the bottom of a greased 9x13 inch baking dish.
- Spread half of the chicken mixture over the plantains, then sprinkle with half of the mozzarella and parmesan cheeses.
- Repeat the layers with the remaining plantains, chicken mixture, and cheeses.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it rest for a few minutes before slicing. Garnish with fresh cilantro before serving.
