Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup frozen corn
  • 1 can (14 oz) black beans, drained and rinsed
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a small bowl, mix the paprika, cumin, garlic powder, salt, and pepper. Rub the spice mixture over the chicken breasts.
  2. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes per side, or until cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the onion and cook for 2-3 minutes until softened. Add the garlic and cook for an additional 30 seconds.
  4. Add the bell pepper, chicken broth, diced tomatoes, corn, and black beans to the skillet. Stir to combine and bring to a simmer.
  5. Return the chicken to the skillet and simmer for 5 minutes, allowing the flavors to meld together.
  6. Sprinkle with fresh cilantro before serving.
