Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup chicken broth
- 1 can (14 oz) diced tomatoes
- 1 cup frozen corn
- 1 can (14 oz) black beans, drained and rinsed
- 1/4 cup chopped fresh cilantro
Instructions
- In a small bowl, mix the paprika, cumin, garlic powder, salt, and pepper. Rub the spice mixture over the chicken breasts.
- Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes per side, or until cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion and cook for 2-3 minutes until softened. Add the garlic and cook for an additional 30 seconds.
- Add the bell pepper, chicken broth, diced tomatoes, corn, and black beans to the skillet. Stir to combine and bring to a simmer.
- Return the chicken to the skillet and simmer for 5 minutes, allowing the flavors to meld together.
- Sprinkle with fresh cilantro before serving.
