Chicken Pulao (goan Style Chicken Biryani)

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • 1/4 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 4 cups chicken broth
  • 1/4 cup chopped coriander leaves
  • Salt to taste
  • 3 tbsp ghee (clarified butter)

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat ghee and sauté the onions until golden brown.
  3. Add the ginger-garlic paste and sauté for 2 minutes.
  4. Add the chicken pieces and cook until they are no longer pink.
  5. Stir in the tomatoes, yogurt, turmeric powder, red chili powder, and garam masala. Cook for 5 minutes.
  6. Add the soaked rice and mix well with the chicken and spices.
  7. Pour in the chicken broth, add salt, and bring to a boil. Reduce the heat, cover, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  8. Garnish with chopped coriander leaves and serve hot.
