Chicken Roast (kozhi Roast)

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, finely chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Curry leaves
  • Salt to taste
  • 2 tbsp coconut oil

Instructions

  1. Marinate the chicken pieces with turmeric powder, red chili powder, coriander powder, garam masala, ginger-garlic paste, and salt. Let it sit for 30 minutes.
  2. Heat coconut oil in a pan and add the chopped onions. Sauté until they turn golden brown.
  3. Add the marinated chicken pieces and cook until they are half done.
  4. Add the chopped tomatoes and curry leaves. Cook until the chicken is tender and the masala is well coated.
  5. Serve hot with steamed rice or roti.
