Chicken Salad (ensalada De Gallina)

Ingredients

  • 2 lbs chicken breast, cooked and shredded
  • 4 large potatoes, boiled and diced
  • 1 cup carrots, cooked and diced
  • 1 cup green peas, cooked
  • 1 cup mayonnaise
  • 1/4 cup mustard
  • 1/4 cup white vinegar
  • Salt and pepper to taste
  • 1/2 cup raisins (optional)
  • 3 hard-boiled eggs, chopped

Instructions

  1. In a large bowl, combine the shredded chicken, diced potatoes, carrots, and green peas.
  2. In a separate bowl, mix the mayonnaise, mustard, white vinegar, salt, and pepper to make the dressing.
  3. Pour the dressing over the chicken and vegetable mixture, and toss until well coated.
