Chicken Satay Sensation

Ingredients

  • 1.5 lbs chicken breast, cut into strips
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/4 cup coconut milk
  • 1/4 cup peanut butter
  • 1 tablespoon lime juice
  • 1 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine soy sauce, brown sugar, garlic, ginger, coconut milk, peanut butter, lime juice, turmeric, cumin, coriander, cayenne pepper, salt, and pepper to make the marinade.
  2. Add the chicken strips to the marinade, cover, and refrigerate for at least 2 hours or overnight.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken strips onto the soaked skewers.
  5. Grill the chicken skewers for 3-4 minutes on each side, or until fully cooked.
  6. Serve the chicken satay with the peanut sauce on the side.
