Chicken Satay (spicy Sate Ayam)

Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into cubes
  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons (30ml) honey
  • 2 cloves garlic, minced
  • 1 teaspoon (5g) ground turmeric
  • 1 teaspoon (5g) ground coriander
  • 1/2 teaspoon (3g) ground cumin
  • 1/4 teaspoon (1g) cayenne pepper
  • 1/4 cup (60ml) coconut milk
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the soy sauce, honey, minced garlic, turmeric, coriander, cumin, cayenne pepper, and coconut milk to make the marinade.
  2. Add the chicken cubes to the marinade, cover, and refrigerate for at least 1 hour, or overnight for best results.
  3. Thread the marinated chicken onto the soaked skewers.
  4. Heat a grill or grill pan over medium-high heat. Grill the chicken skewers for 3-4 minutes on each side, or until cooked through and slightly charred.
  5. Serve the chicken satay with peanut sauce and enjoy!
