Ingredients

  • 1 whole chicken, cut into pieces
  • 4 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 200g bean sprouts
  • 4 hard-boiled eggs, halved
  • 200g rice vermicelli, cooked
  • 4 shallots, thinly sliced and fried
  • 2 tomatoes, cut into wedges
  • 4 cups chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant.
  2. Add the chicken pieces to the pot and cook until they are no longer pink.
  3. Pour in the chicken broth and add the lemongrass, kaffir lime leaves, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 45 minutes.
  4. Remove the chicken pieces from the pot and shred the meat. Set aside.
  5. Divide the cooked rice vermicelli, bean sprouts, shredded chicken, hard-boiled eggs, fried shallots, and tomato wedges into serving bowls.
  6. Ladle the hot broth over the ingredients in each bowl.
  7. Serve the Chicken Soup Euphoria hot with a side of steamed rice and lime wedges.
