Chicken Soup Euphoria (Soto Ayam Euphoria) is a traditional Javanese cuisine that is known for its rich and aromatic broth, tender chicken, and a burst of flavors from various spices and herbs.
Ingredients
- 1 whole chicken, cut into pieces
- 4 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 200g bean sprouts
- 4 hard-boiled eggs, halved
- 200g rice vermicelli, cooked
- 4 shallots, thinly sliced and fried
- 2 tomatoes, cut into wedges
- 4 cups chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the chicken pieces to the pot and cook until they are no longer pink.
- Pour in the chicken broth and add the lemongrass, kaffir lime leaves, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 45 minutes.
- Remove the chicken pieces from the pot and shred the meat. Set aside.
- Divide the cooked rice vermicelli, bean sprouts, shredded chicken, hard-boiled eggs, fried shallots, and tomato wedges into serving bowls.
- Ladle the hot broth over the ingredients in each bowl.
- Serve the Chicken Soup Euphoria hot with a side of steamed rice and lime wedges.
