Chicken Soup, known as Kådu in Guamanian cuisine, is a comforting and hearty dish that is perfect for a cozy night in or when feeling under the weather.

Ingredients

  • 1 whole chicken, cut into pieces
  • 8 cups water
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 potato, diced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 bay leaves
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot, combine the chicken pieces and water. Bring to a boil, then reduce heat and simmer for 30 minutes.
  2. Skim off any foam that rises to the surface.
  3. Add the onion, garlic, carrots, celery, potato, salt, pepper, and bay leaves. Simmer for an additional 30 minutes, or until the chicken is cooked through and the vegetables are tender.
  4. Remove the chicken pieces from the pot and shred the meat, discarding the bones and skin.
  5. Return the shredded chicken to the pot and stir in the chopped parsley. Adjust seasoning to taste.
  6. Serve the Kådu hot and enjoy!
