Chicken Soup (kådu)
Chicken Soup, known as Kådu in Guamanian cuisine, is a comforting and hearty dish that is perfect for a cozy night in or when feeling under the weather.
Ingredients
- 1 whole chicken, cut into pieces
- 8 cups water
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 potato, diced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 bay leaves
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, combine the chicken pieces and water. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Skim off any foam that rises to the surface.
- Add the onion, garlic, carrots, celery, potato, salt, pepper, and bay leaves. Simmer for an additional 30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove the chicken pieces from the pot and shred the meat, discarding the bones and skin.
- Return the shredded chicken to the pot and stir in the chopped parsley. Adjust seasoning to taste.
- Serve the Kådu hot and enjoy!
