Ingredients
- 1 whole chicken, cut into pieces
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 1 tomato, chopped
- 2 garlic cloves, minced
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- 8 cups water
- Fresh cilantro for garnish
Instructions
- In a large pot, combine the chicken, onion, carrots, potatoes, tomato, garlic, turmeric, cumin, coriander, salt, and pepper.
- Pour in the water and bring the soup to a boil over medium-high heat.
- Reduce the heat to low, cover the pot, and let the soup simmer for 1 hour, or until the chicken is cooked through and the vegetables are tender.
- Skim off any foam that rises to the surface during cooking.
- Once the soup is ready, remove the chicken pieces from the pot and shred the meat using two forks.
- Return the shredded chicken to the pot and stir to combine.
- Adjust the seasoning if needed and serve the soup hot, garnished with fresh cilantro.
