Chicken Soup (soto Ayam Delight)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 stalks lemongrass, smashed
  • 5 kaffir lime leaves
  • 4 cloves garlic, minced
  • 1-inch ginger, sliced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 4 cups chicken broth
  • 2 cups coconut milk
  • Salt and pepper to taste
  • 2 tbsp cooking oil
  • 8 oz rice vermicelli, cooked according to package instructions
  • 4 hard-boiled eggs, halved
  • 1 cup bean sprouts, blanched
  • 4 sprigs cilantro, chopped
  • 4 lime wedges

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the minced garlic, sliced ginger, turmeric powder, coriander powder, and cumin powder. Sauté until fragrant.
  2. Add the chicken pieces to the pot and cook until they are no longer pink.
  3. Pour in the chicken broth and coconut milk. Add the lemongrass and kaffir lime leaves. Season with salt and pepper. Simmer for 45 minutes.
  4. Remove the chicken pieces from the pot and shred the meat. Discard the bones and return the shredded chicken to the pot.
  5. To serve, divide the cooked rice vermicelli among 4 bowls. Ladle the chicken soup over the noodles. Top with a halved hard-boiled egg, blanched bean sprouts, and chopped cilantro. Serve with a lime wedge.
