Chicken Stew (sibhobho)

Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 2 garlic cloves, minced
- 1 green bell pepper, sliced
- 2 potatoes, peeled and cubed
- 2 carrots, sliced
- 2 cups chicken broth
- 1 teaspoon paprika
- 1 teaspoon curry powder
- Salt and pepper to taste
- 2 tablespoons cooking oil
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onions and minced garlic, and sauté until the onions are translucent.
- Add the chicken pieces to the pot and brown them on all sides.
- Stir in the diced tomatoes, paprika, and curry powder, and cook for 5 minutes.
- Pour in the chicken broth and bring the stew to a simmer.
- Add the potatoes, carrots, and green bell pepper to the pot.
- Season with salt and pepper, then cover and let the stew simmer for 45 minutes, or until the chicken is cooked through and the vegetables are tender.
- Adjust the seasoning if needed, then serve the chicken stew hot with rice or pap.
