Chicken Sukka Pulao

Chicken Sukka Pulao is a delicious and aromatic dish from the Mangalurean Catholic Cuisine. It is a flavorful combination of tender chicken pieces and fragrant rice, cooked with a blend of traditional Indian spices.

Chicken Sukka Pulao

Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 3-4 green chilies, slit
  • 1/2 cup coconut, grated
  • 1 tsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 tsp cumin seeds
  • 2-3 cloves
  • 2-3 cardamom pods
  • 1 inch cinnamon stick
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. Heat oil in a large pan and add cumin seeds, cloves, cardamom, and cinnamon. Sauté for a minute.
  3. Add the chopped onions and green chilies. Sauté until the onions turn golden brown.
  4. Stir in the ginger-garlic paste and cook for 2 minutes.
  5. Add the chicken pieces and cook until they are no longer pink.
  6. Now, add the chopped tomatoes, red chili powder, turmeric powder, and salt. Cook until the tomatoes are soft and the oil separates.
  7. Stir in the grated coconut and garam masala. Cook for another 2-3 minutes.
  8. Add the soaked rice and mix well with the chicken masala.
  9. Pour in 4 cups of water and bring to a boil. Reduce the heat, cover the pan, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  10. Garnish with fresh coriander leaves and serve hot.
