Chicken Sukka Pulao
Chicken Sukka Pulao is a delicious and aromatic dish from the Mangalurean Catholic Cuisine. It is a flavorful combination of tender chicken pieces and fragrant rice, cooked with a blend of traditional Indian spices.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 3-4 green chilies, slit
- 1/2 cup coconut, grated
- 1 tsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1/2 tsp cumin seeds
- 2-3 cloves
- 2-3 cardamom pods
- 1 inch cinnamon stick
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- Heat oil in a large pan and add cumin seeds, cloves, cardamom, and cinnamon. Sauté for a minute.
- Add the chopped onions and green chilies. Sauté until the onions turn golden brown.
- Stir in the ginger-garlic paste and cook for 2 minutes.
- Add the chicken pieces and cook until they are no longer pink.
- Now, add the chopped tomatoes, red chili powder, turmeric powder, and salt. Cook until the tomatoes are soft and the oil separates.
- Stir in the grated coconut and garam masala. Cook for another 2-3 minutes.
- Add the soaked rice and mix well with the chicken masala.
- Pour in 4 cups of water and bring to a boil. Reduce the heat, cover the pan, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
- Garnish with fresh coriander leaves and serve hot.
