Chicken Tikka Masala

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 4 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons ghee or vegetable oil
- 1 large onion, finely chopped
- 1 can (14 oz) tomato sauce
- 1 cup heavy cream
- 2 tablespoons chopped fresh cilantro, for garnish
Instructions
- In a large bowl, combine the yogurt, lemon juice, garlic, ginger, cumin, paprika, turmeric, garam masala, coriander, cayenne pepper, salt, and black pepper. Add the chicken pieces and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- In a large skillet or pot, heat the ghee or oil over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the marinated chicken to the skillet and cook until browned, about 5-7 minutes.
- Pour in the tomato sauce and simmer for 15 minutes, stirring occasionally.
- Stir in the heavy cream and simmer for an additional 10 minutes, until the chicken is cooked through and the sauce has thickened.
- Garnish with chopped cilantro and serve hot with steamed rice or naan.
