Chicken Tinola Twist

Ingredients
- 1 whole chicken, cut into pieces
- 2 tablespoons cooking oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 thumb-sized ginger, julienned
- 2 cups water
- 1 cup malunggay leaves
- 1 cup squash, cubed
- 1 cup spinach
- Salt and pepper to taste
Instructions
- In a pot, heat the cooking oil over medium heat.
- Saute the onion, garlic, and ginger until fragrant.
- Add the chicken pieces and cook until lightly browned.
- Pour in the water and bring to a boil. Simmer for 15 minutes.
- Add the squash and cook for another 5 minutes.
- Stir in the malunggay leaves and spinach. Season with salt and pepper.
- Serve hot and enjoy!
