Chicken Tortilla Casserole

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1 cup salsa
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 12 corn tortillas
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, diced red bell pepper, salsa, sour cream, 1 cup of shredded cheddar cheese, chili powder, cumin, salt, and pepper.
  3. Spread a thin layer of the chicken mixture in the bottom of a 9x13 inch baking dish.
  4. Arrange 6 corn tortillas over the chicken mixture, overlapping as necessary.
  5. Top with half of the remaining chicken mixture.
  6. Repeat the layers with the remaining tortillas and chicken mixture.
  7. Sprinkle the remaining 1 cup of shredded cheddar cheese over the top.
  8. Cover the dish with foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  10. Let the casserole rest for 5 minutes before serving.
