Chicken Tortilla Casserole
This chicken tortilla casserole is a delicious and comforting dish that combines the flavors of Mexican cuisine with the convenience of a casserole. It's perfect for a family dinner or a potluck gathering.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 cup salsa
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 12 corn tortillas
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the shredded chicken, black beans, corn, diced red bell pepper, salsa, sour cream, 1 cup of shredded cheddar cheese, chili powder, cumin, salt, and pepper.
- Spread a thin layer of the chicken mixture in the bottom of a 9x13 inch baking dish.
- Arrange 6 corn tortillas over the chicken mixture, overlapping as necessary.
- Top with half of the remaining chicken mixture.
- Repeat the layers with the remaining tortillas and chicken mixture.
- Sprinkle the remaining 1 cup of shredded cheddar cheese over the top.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let the casserole rest for 5 minutes before serving.
