Chicken Vindaloo (spicy Chicken Vindaloo)

Ingredients

  • 1.5 lbs (700g) chicken, cut into pieces
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 3-4 green chilies, slit
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp paprika
  • 1 tsp garam masala
  • 1/2 cup (120ml) vinegar
  • 2-3 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat oil in a large pan and add cumin seeds and mustard seeds. Let them crackle.
  2. Add chopped onions, garlic, ginger, and green chilies. Sauté until the onions turn golden brown.
  3. Add the chicken pieces and cook until they are no longer pink.
  4. Stir in the turmeric, red chili powder, paprika, and garam masala. Cook for a few minutes.
  5. Pour in the vinegar and add salt. Stir well and let it simmer for 20-25 minutes until the chicken is cooked through and the sauce thickens.
  6. Serve hot with steamed rice or naan.
