Ingredients
- 8 oz penne pasta
- 2 chicken breasts, diced
- 1/2 cup vodka
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1/2 cup chopped fresh basil
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water and cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and cook until browned and cooked through.
- Add the minced garlic to the skillet and cook for 1-2 minutes until fragrant.
- Pour in the vodka and let it simmer for a few minutes until the alcohol evaporates.
- Reduce the heat to low and stir in the heavy cream, Parmesan cheese, and chopped basil. Simmer for 5 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Add the cooked pasta to the skillet and toss to coat it with the creamy sauce.
- Serve hot, garnished with additional Parmesan cheese and basil if desired.
