Chicken Vodka Pasta

Ingredients

  • 8 oz penne pasta
  • 2 chicken breasts, diced
  • 1/2 cup vodka
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1/2 cup chopped fresh basil
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water and cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and cook until browned and cooked through.
  3. Add the minced garlic to the skillet and cook for 1-2 minutes until fragrant.
  4. Pour in the vodka and let it simmer for a few minutes until the alcohol evaporates.
  5. Reduce the heat to low and stir in the heavy cream, Parmesan cheese, and chopped basil. Simmer for 5 minutes until the sauce thickens.
  6. Season with salt and pepper to taste.
  7. Add the cooked pasta to the skillet and toss to coat it with the creamy sauce.
  8. Serve hot, garnished with additional Parmesan cheese and basil if desired.
