Chicken With Pineapple (pollo Con Piña)

Chicken With Pineapple (pollo Con Piña)

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into cubes
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1/2 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt and pepper.
  2. Heat 1 tbsp of oil in a large skillet over medium-high heat. Add the chicken and cook until browned. Remove from the skillet and set aside.
  3. Heat the remaining oil in the same skillet. Add the garlic and ginger, and sauté until fragrant.
  4. Add the onion and bell pepper, and cook until they begin to soften.
  5. Stir in the soy sauce, oyster sauce, and brown sugar. Cook for 1-2 minutes.
  6. Return the chicken to the skillet and add the pineapple chunks and chicken broth. Simmer for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Serve the chicken with pineapple over rice or noodles.
