Chicken With Pineapple (pollo Con Piña)
This Puerto Rican Chinese fusion dish combines the flavors of tender chicken with the sweetness of pineapple for a delightful and unique culinary experience.
Ingredients
- 1 lb boneless, skinless chicken breast, cut into cubes
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp brown sugar
- 1/2 cup chicken broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken with salt and pepper.
- Heat 1 tbsp of oil in a large skillet over medium-high heat. Add the chicken and cook until browned. Remove from the skillet and set aside.
- Heat the remaining oil in the same skillet. Add the garlic and ginger, and sauté until fragrant.
- Add the onion and bell pepper, and cook until they begin to soften.
- Stir in the soy sauce, oyster sauce, and brown sugar. Cook for 1-2 minutes.
- Return the chicken to the skillet and add the pineapple chunks and chicken broth. Simmer for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened.
- Serve the chicken with pineapple over rice or noodles.
