Ingredients

  • 4 chicken thighs
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Add the chicken thighs to the pot and brown on all sides.
  3. Stir in the crushed tomatoes, chicken broth, cumin, paprika, turmeric, salt, and pepper. Bring to a simmer.
