Ingredients
- 4 chicken thighs
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 can (14 oz) crushed tomatoes
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the chicken thighs to the pot and brown on all sides.
- Stir in the crushed tomatoes, chicken broth, cumin, paprika, turmeric, salt, and pepper. Bring to a simmer.
- Add the basmati rice to the pot and stir to combine. Cover and cook for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Once done, remove the pot from the heat and let it sit for 5 minutes before serving.
